One Skillet Salmon with Lemon Orzo

A delightful and easy recipe that brings together salmon and lemon-infused orzo in one skillet for a simple weeknight meal.

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add the orzo and stir for a minute, allowing it to toast slightly.
  3. Pour in the chicken broth and bring to a simmer. Cook for about 10 minutes until the orzo is al dente.
  4. While the orzo is cooking, season the salmon fillets with salt and black pepper.
  5. Push the orzo to the side of the skillet and place the salmon fillets skin-side down. Cook for 5-6 minutes until the salmon is cooked through.
  6. Finish with lemon juice and zest, then sprinkle with fresh parsley.
  7. Serve warm and enjoy!
