  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 cup chopped onions
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode. Add the turkey bacon and cook until crispy. Remove and chop.
  2. Add butter, onions, and carrots; sauté until softened.
  3. Add broccoli and chicken broth. Close the lid and set to manual high pressure for 5 minutes.
  4. Quick release the pressure and stir in heavy cream and cheese until melted.
  5. Season with garlic powder, onion powder, salt, and pepper.
  6. Serve hot, topped with chopped turkey bacon.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Substitute with vegetable broth for a vegetarian option.
