  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (15 oz) pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil.
  4. Add the eggs and pumpkin puree to the sugar mixture, mixing well.
  5. Gradually stir in the dry ingredients until just combined.
  6. Divide the batter evenly between two greased and floured round cake pans.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  9. Once cooled, frost with your favorite cream cheese frosting.

Notes

  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
  • If desired, add chopped nuts or chocolate chips to the batter for extra texture.
