Pumpkin Cottage Cheese Bake

  • 1 cup cottage cheese
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, pumpkin puree, sugar, cinnamon, nutmeg, eggs, and vanilla extract until well blended.
  3. In another bowl, mix crushed graham crackers with melted butter.
  4. Press the graham cracker mixture into the bottom of a greased baking dish.
  5. Pour the pumpkin mixture over the crust.
  6. Bake for 45-50 minutes or until set.
  7. Allow to cool slightly before serving.
