Pumpkin & Gouda Stuffed Shells With Brown Butter & Sage Alfredo Sauce

  • 12 jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 6 leaves fresh sage
  • 2 cups heavy cream
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the pasta shells according to package instructions and drain.
  3. In a bowl, mix pumpkin puree, gouda, ricotta, nutmeg, salt, and pepper.
  4. Fill each shell with the pumpkin mixture.
  5. In a saucepan, melt the butter and add sage until fragrant.
  6. Add heavy cream and parmesan to the butter sauce.
  7. Place stuffed shells in a baking dish, pour sauce over, and bake for 25 minutes.

Notes

  • For a spicier kick, add some cayenne pepper to the filling.
  • For a lighter version, substitute half and half for heavy cream.
