  • 1 pound shrimp, peeled and deveined
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • 1 tablespoon lime juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add bell pepper and red pepper flakes, cook for another 2-3 minutes.
  3. Stir in the diced tomatoes and chicken broth, bring to a simmer.
  4. Add shrimp and cook until pink and opaque, about 5 minutes.
  5. Stir in lime juice and adjust seasoning with salt.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For more heat, add extra red pepper flakes.
  • This soup can be served with rice for a hearty meal.
