  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup coconut milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45 minutes or until tender.
  3. Meanwhile, heat olive oil in a large pot over medium heat and sauté onions until translucent.
  4. Add minced garlic and cook for another minute.
  5. Remove the sweet potatoes from the oven, cool slightly, and scoop the flesh into the pot.
  6. Add the vegetable broth, cumin, salt, and pepper; bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Use an immersion blender to puree the soup until smooth.
  9. Stir in the coconut milk and heat through before serving.
