- 1 pound ground turkey
- 4 strips turkey bacon
- 2 cups chicken broth
- 1 cup carrots, diced
- 1 cup peas
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 tablespoon olive oil
- 4 cups mashed potatoes
- In a large pot, heat olive oil over medium heat. Cook the turkey bacon until crispy, then remove and chop.
- Add ground turkey to the same pot and brown it. Season with thyme, rosemary, and Worcestershire sauce.
- Add onions and garlic, sautéing until translucent.
- Stir in the carrots, peas, and tomato paste, mixing everything well.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 20 minutes.
- Add the chopped turkey bacon back into the pot.
- Serve the soup hot over a dollop of mashed potatoes.
