Shepherd’s Pie Soup

A rich and hearty Shepherd’s Pie Soup that combines the delicious flavors of turkey bacon and chicken ham, perfect for a comforting meal.

Ingredients

  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 2 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon olive oil
  • 4 cups mashed potatoes

Instructions

  1. In a large pot, heat olive oil over medium heat. Cook the turkey bacon until crispy, then remove and chop.
  2. Add ground turkey to the same pot and brown it. Season with thyme, rosemary, and Worcestershire sauce.
  3. Add onions and garlic, sautéing until translucent.
  4. Stir in the carrots, peas, and tomato paste, mixing everything well.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 20 minutes.
  6. Add the chopped turkey bacon back into the pot.
  7. Serve the soup hot over a dollop of mashed potatoes.

Notes

  • This soup can be made ahead of time and reheated.
  • Feel free to add any leftover vegetables you have on hand.
