4 boneless chicken breasts
1 cup fig jam
4 ounces goat cheese
1 cup chicken broth
1 tablespoon balsamic vinegar
1 teaspoon salt
½ teaspoon black pepper
Instructions
Place the chicken breasts in the slow cooker.
In a bowl, mix together the fig jam, chicken broth, balsamic vinegar, salt, and pepper. Pour over the chicken.
Cover and cook on low for 6-7 hours or until chicken is cooked through.
During the last 30 minutes of cooking, crumble the goat cheese on top of the chicken.
Serve warm with the fig sauce spooned over the chicken.
