Slow Cooker Cowboy Potato Casserole

A hearty and delicious slow cooker recipe featuring layers of flavor and texture from turkey bacon and cheese.

  • 2 pounds russet potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup onion, diced
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Layer half of the potatoes in the slow cooker.
  2. Top with half of the turkey bacon, onions, and cheese.
  3. In a bowl, mix sour cream, garlic powder, paprika, salt, and pepper.
  4. Spread half of the sour cream mixture over the layered ingredients.
  5. Repeat layers with remaining ingredients.
  6. Cook on low for 6-8 hours or on high for 3-4 hours until potatoes are tender.

Notes

  • For a bit more flavor, add in some diced bell peppers.
  • Adjust cooking time based on the thickness of potato slices.
