Slow Cooker Honey Garlic Chicken and Veggies

A delicious slow cooker recipe combining honey garlic chicken with fresh veggies for a wholesome meal.

  • 2 pounds boneless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 3 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a bowl, whisk together honey, soy sauce, and minced garlic.
  2. Place chicken thighs in the slow cooker and pour the honey garlic mixture over them.
  3. Add mixed vegetables to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, remove chicken and shred it. Mix cornstarch with water, stir into the slow cooker, and cook for an additional 30 minutes.
  6. Return shredded chicken to the slow cooker and mix well before serving.

Notes

  • For added flavor, you can marinate the chicken in the honey garlic sauce for a few hours before cooking.
  • Feel free to use any vegetables of your choice.
