- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 1/2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup maple syrup (for frosting)
- 1 cup powdered sugar (for frosting)
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the pumpkin puree, brown sugar, granulated sugar, and softened butter until smooth.
- Beat in the egg and vanilla extract until fully combined.
- In another bowl, mix rolled oats, flour, pumpkin pie spice, baking soda, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown.
- Remove from oven and let cool completely.
- For the frosting, whisk together maple syrup and powdered sugar until smooth and spreadable.
- Spread the frosting over the cooled cookies.
