  • 1/2 cup brown sugar

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup maple syrup (for frosting)
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the pumpkin puree, brown sugar, granulated sugar, and softened butter until smooth.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In another bowl, mix rolled oats, flour, pumpkin pie spice, baking soda, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Remove from oven and let cool completely.
  9. For the frosting, whisk together maple syrup and powdered sugar until smooth and spreadable.
  10. Spread the frosting over the cooled cookies.

Notes

  • For an extra flavor boost, add chopped nuts or chocolate chips to the cookie dough.
