  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg

  • 1 cup powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter and sugars until light and fluffy.
  4. Add the pumpkin, egg, and vanilla to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients until combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until set. Allow cooling on a wire rack.
  8. For the frosting, whisk together powdered sugar and milk until smooth and creamy.
  9. Frost the cooled cookies and serve.
