Southwest Chicken And Rice Skillet

A delicious and easy-to-make meal that brings together southwest flavors in a skillet.

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon southwest seasoning
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add cooked chicken, rice, black beans, corn, diced tomatoes, chicken broth, and southwest seasoning.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. Top with shredded cheese before serving, if desired.
