  • 4 cups cabbage, shredded

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon mayonnaise

Instructions

  1. In a skillet, heat olive oil over medium heat. Add chicken thighs and sear until golden brown.
  2. In a separate bowl, mix apple cider, honey, salt, and pepper. Pour the mixture over the chicken and simmer until cooked through.
  3. In another bowl, combine cabbage, carrots, apple, apple cider vinegar, and mayonnaise. Toss well to make the slaw.
  4. Serve the chicken topped with the crisp autumn slaw.

Notes

  • Adjust sweetness of the sauce by adding more or less honey.
  • For extra crunch, add nuts to the slaw.
