Strawberry Crumble Cheesecake

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 4 cream cheese blocks, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a mixer, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
  4. Pour the cream cheese mixture over the crust.
  5. Bake for 50 minutes. Turn off the oven and leave the cheesecake in for an additional hour.
  6. Cool, then chill in the refrigerator.
  7. Toss strawberries with cornstarch, then layer them on top before serving.
