Sweet Potato & Cranberry Gratin

  • 2 pounds sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1/2 cup grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes thinly.
  3. In a greased baking dish, layer the sweet potatoes and cranberries.
  4. In a separate bowl, mix the cream, cheddar cheese, salt, pepper, and thyme.
