Ingredients

  • 2 pounds sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1 cup grated cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. Layer half of the sweet potatoes in a greased baking dish.
  4. Spread cranberries over the sweet potatoes.
  5. Layer the remaining sweet potatoes on top.
  6. In a bowl, mix heavy cream, cheese, salt, pepper, and thyme. Pour over the sweet potatoes.
  7. Top with breadcrumbs and dot with butter.
  8. Bake for 45-60 minutes until golden and bubbly.
