- 1 cup jasmine rice
- 2 cups coconut milk
- 1 pound chicken breast, cubed
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 green onion, sliced
- 1/4 cup cilantro, chopped
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine rice and coconut milk. Bring to a boil, then reduce heat and cover, simmering for about 15 minutes until rice is cooked.
