  • 2 cups coconut milk
  • 1 pound chicken breast, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 green onion, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rice and coconut milk. Bring to a boil, then reduce heat and cover, simmering for about 15 minutes until rice is cooked.
  3. In a skillet, heat some oil over medium heat and add the minced garlic and ginger. Sauté until fragrant.
  4. Add the cubed chicken to the skillet, cooking until golden brown.
  5. Stir in soy sauce, fish sauce, lime juice, salt, and pepper. Cook for an additional 5 minutes.
  6. Fluff the rice and serve topped with the coconut chicken mixture. Garnish with green onions and cilantro.
