The Pioneer Woman’s Twice Baked Potato Casserole

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 8 slices turkey bacon, cooked and crumbled
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bake the potatoes until tender, about 1 hour.
  3. Allow the potatoes to cool, then scoop out the insides into a mixing bowl.
  4. Add sour cream, cheese, green onions, turkey bacon, garlic powder, salt, and pepper to the potatoes; mix until well combined.
  5. Transfer the mixture to a baking dish and smooth the top.
  6. Bake for 20-25 minutes until heated through and the top is slightly golden.

Notes

  • For extra flavor, consider adding some shredded mozzarella cheese on top before baking.
