Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla bean paste
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large mixing bowl, cream together the butter and sugars until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Incorporate the cream cheese and vanilla bean paste, blending until smooth.
  5. Gradually add the flour and mix until just combined. Fill cupcake liners about 2/3 full.
  6. Bake for 20 minutes or until a toothpick comes out clean. Let them cool completely.
  7. In a separate bowl, whip the heavy cream until stiff peaks form. Top the cooled cupcakes with whipped cream.
  8. Sprinkle a thin layer of granulated sugar over the whipped cream and use a kitchen torch to caramelize the sugar until golden brown.

Notes

  • Allow cupcakes to cool thoroughly before adding the whipped cream topping.
  • Be careful with the kitchen torch, as the sugar can quickly burn.
