Vanilla & Speculoos Crêpe Cake

A delightful dessert combining layers of vanilla and speculoos flavors.

Ingredients

  • 15 crêpes
  • 2 cups heavy cream
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup speculoos cookies, crushed
  • 1 tablespoon speculoos spread

Instructions

  1. In a bowl, whip the heavy cream until soft peaks form.
  2. In a separate bowl, combine mascarpone cheese and powdered sugar.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Add vanilla extract and mix gently until combined.
  5. To assemble, spread a thin layer of the cream mixture on a crêpe, add a layer of crushed speculoos, then top with another crêpe.
  6. Repeat until all crêpes and cream mixture are used, finishing with the cream on top.
  7. Chill the crêpe cake in the refrigerator for at least 4 hours before serving.

Notes

  • For a richer flavor, use more speculoos spread between layers.
  • Ensure the crêpes are completely cooled before layering.
