Zuppa Toscana Soup

A delicious and healthy take on the classic Zuppa Toscana, using turkey bacon for a lighter option.

Ingredients

  • 6 cups chicken broth
  • 1 pound turkey bacon
  • 2 cups kale, chopped
  • 2 large potatoes, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add the potatoes and chicken broth, bring to a boil.
  4. Reduce heat, add kale, red pepper flakes, and Italian seasoning.
  5. Once potatoes are tender, stir in heavy cream and cooked turkey bacon.
  6. Season with salt and pepper to taste, then serve hot.

Notes

  • Feel free to add more vegetables like carrots or celery for extra nutrition.
  • Best served fresh, but can be refrigerated for a couple of days.
