  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy, then add the egg and vanilla.
  4. Gradually mix in the dry ingredients until combined.
  5. Drop tablespoons of dough onto the prepared baking sheet and bake for 10-12 minutes.
  6. Let cookies cool completely.
  7. In a separate bowl, whip the heavy cream with powdered sugar until peaks form.
  8. Spread whipped cream between two cookies, then drizzle melted chocolate over the top.

Notes

  • For a different flavor, try adding orange zest to the dough.
  • These cookies can be refrigerated for up to 3 days.
