Ingredients

  • 1 cup pomegranate juice
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the sugar and pomegranate juice over medium heat until the sugar dissolves.
  2. Add the butter and stir until melted.
  3. Carefully pour in the heavy cream, then add the salt.
  4. Bring the mixture to a boil, then reduce to a simmer and cook until it reaches 240°F (soft ball stage).
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the caramel into a greased pan and allow to cool completely before cutting into squares.
